Scallops with Creamy Pesto
Heat 1 1/2 tsp. oil in a large nonstick
skillet over medium-high heat. Add 1 1/2
lb. sea scallops and cook 4 minutes,
turning once, until golden and just
barely opaque at the centers. Remove to
a plate. Off heat, add Basil Pesto and
2 Tbs. heavy or whipping cream; stir to
blend.
Spoon pesto-cream sauce onto serving
plates and top with scallops.

• Toss with pasta.
• Top a pizza crust with pesto, mozzarella cheese
and your choice of shredded chicken and/or grilled vegetables.

• Add goat cheese, sun-dried tomato and 1 Tbs.
Cilantro Pesto to an omelet before cooking.
• Swirl pesto into with red beans and rice.
• Coat chunky bread cubes with pesto and bake
to create rustic croutons.
• Set out a dish of “dipping” pesto with crisp
crackers and cheese.

FRESH LEMONY PESTO
• Swirl pesto into your favorite hummus dip.
• Use as an alternative dip for cocktail shrimp.
• Add 1 Tbs. Lemony Pesto when you sauté
broccoli raab or asparagus.
• Sauté chicken with olive oil and pesto and
add to cooked pasta.
• Zest oil and vinegar salad dressing with pesto.

• Add 1 Tbs. Tomato-Garlic Pesto to a flank steak
stir-fry.
• Top a pizza crust with pesto and roasted peppers.
• Coat chicken pieces in pesto and roll in bread

• Blend cream cheese and pesto and enjoy with
crackers.
