GRILLED SALMON SKEWERS WITH CILANTRO PESTO

Ingredients:
Nonstick cooking spray
1 pound skinless salmon fillet, cut into 1” pieces
4 tablespoons Bear Pond Farm Cilantro Pesto
1 teaspoon salt
8 bamboo skewers soaked in water 1 hour, or metal skewers sprayed with cooking spray

Directions:
Prepare the grill: Spray the grill lightly. Heat the grill to a medium flame. In a bowl, toss salmon pieces with pesto. Thread salmon onto skewers. Spray the fish lightly with oil and season with salt. Grill the fish, turning occasionally, until fish is opaque throughout, and pieces flake easily with a fork, about 8 to 10 minutes total.

Makes about 4 servings.
