ROASTED SALMON WITH CILANTRO PESTO AND KALE

Ingredients:
Nonstick cooking spray
4 salmon fillets (about 4 ounces each)
1 leaf fresh kale, rinsed and chopped
6 tablespoons Bear Pond Farm Cilantro Pesto
Salt and pepper

Directions:
Preheat the oven to 400°F. Spray baking pan and place the salmon pieces skin-side down. Combine Cilantro Pesto and kale, and spoon over the salmon. Season with salt and pepper. Bake uncovered for 15-18 minutes.

Makes about 4 servings.
