Easy
Pesto
Ramen

    Ingredients:

    • 4 cups low sodium chicken broth
    • 1 8 oz chicken breast, cooked and cubed
    • 2 soft boiled eggs, peeled and halved
    • 1 bunch spinach, washed
    • 1/2 cup edamame, cooked
    • 4 oz fresh ramen noodles
    • 2 tablespoons Bear Pond Farm Premium Basil Pesto
    • 1 tablespoon soy sauce
    • 1/2 oz ginger, peeled and sliced
    • 1 garlic clove, peeled
    • green onion, sliced for garnish (optional)
    • salt and pepper, to taste

    Easy Pesto Ramen

    Ingredients:

    • 4 cups low sodium chicken broth
    • 1 8 oz chicken breast, cooked and cubed
    • 2 soft boiled eggs, peeled and halved
    • 1 bunch spinach, washed
    • 1/2 cup edamame, cooked
    • 4 oz fresh ramen noodles
    • 2 tablespoons Bear Pond Farm Premium Basil Pesto
    • 1 tablespoon soy sauce
    • 1/2 oz ginger, peeled and sliced
    • 1 garlic clove, peeled
    • green onion, sliced for garnish (optional)
    • salt and pepper, to taste

    Instructions:

    Bring the chicken broth, Bear Pond Farm Premium Basil Pesto, soy sauce, ginger and garlic to a boil in a large soup pot over high heat.

    Lower the heat to a simmer and cook for 10 minutes.

    After 10 minutes, remove the garlic and ginger and adjust the seasoning with salt and pepper.

    Add the ramen noodles and spinach. Cook for about 5 minutes over medium heat until the noodles are cooked through and the spinach is wilted.

    Garnish the soup with the cubed chicken, eggs, edamame and sliced green onion if using.

    Divide into 2 large soup bowls and enjoy.
