Ingredients:
- 4 slices Italian or Sourdough bread
- 2 tablespoons unsalted butter, room temperature
- 1 roasted pepper, sliced
- 4 slices mozzarella cheese
- 4 tablespoons Bear Pond Farm Premium Basil Pesto
- 2 tablespoons grated Parmesan
Parmesan-Crusted Pepper Pesto Grilled Cheese
Ingredients:
- 4 slices Italian or Sourdough bread
- 2 tablespoons unsalted butter, room temperature
- 1 roasted pepper, sliced
- 4 slices mozzarella cheese
- 4 tablespoons Bear Pond Farm Premium Basil Pesto
- 2 tablespoons grated Parmesan
Instructions:
Butter one side of each slice of bread, then sprinkle the Parmesan evenly over each slice.
Press the cheese gently into the bread with a butter knife so it will stick.
Place two slices, cheese side down in a cast iron skillet or heavy bottomed pan.
Spoon 2 Tablespoons of Bear Pond Farm Premium Basil Pesto over each slice, followed by 2 slices of mozzarella and the red pepper. Top with the remaining bread cheese side up.
Place the pan over medium high heat and cook for 3-4 minutes until golden brown. Then gently turn over the sandwich and cook for another 3-4 minutes until both sides are golden brown and the cheese has melted.
Slice the sandwiches in half and serve immediately.
